Re-Entry Rice & Chicken
/Ingredients:
2 chicken breasts cubed
2 tbs of butter or ghee
1 sliced yellow onion
1 whole garlic clove peeled
1/4 tsp ground ginger
1 tsp cumin
1/2 tsp turmeric
1/2 tsp cinnamon
1 tbs smoky paprika
2 tsp salt
1 freezer bag of pureed summer tomatoes and chili peppers (substitute with 2 cans of tomato puree and tsp of chili powder)
1 cup water
2 cups of cooked brown rice or cauliflower rice
Cliantro leaves for garnish
Directions:
Heat skillet to medium heat. Add butter, spices, onions and garlic. Fry spices in butter for 3-5 minutes being careful not to let burn. Add water and tomatoes ( you have our blessing to throw them in straight from the freezer). Bring to a simmer. Add cubed chicken. Cover and simmer over low heat for 20 minutes. Serve warm over rice. Garnish with cilantro.
