Lemon & Herb Roasted Chicken
/Lemon and Herb Marinated Chicken
Ingredients:
Spatch-cocked Chicken (chicken with backbone removed)
1/4c of Olive Oil
Zest and Juice of 1 lemon
2 Tbs Black Pepper
2-3 Tsp Red Pepper Flakes
2 Tsp Agave Syrup
1 Garlic Clove Chopped
5 Sage leaves chopped
2 Sprigs of Thyme de-stemmed
1 Sprig of Oregano de-stemmed
3-5 Sprigs of Parsley Chopped
1 Sprig of Mint Chopped
5 Basil Leaves chopped
2 Tbs Kosher Salt
Directions
In a large bowl or baking dish mix all ingredients except salt
Rub the chicken with the marinade on both sides and let sit for 30 minutes
Preheat oven to 500
Line a baking sheet with tinfoil
Remove chicken from marinade and salt both sides
Place chicken flat, skin side up on baking sheet
Pour remaining marinade over the chicken
Cook for 10 minutes at 500
Lower oven temp to 425 and cook for another 30 min or until skin is crispy and juices run clear
Serve with pan drippings on the side
We serve this with a simple garden salad and roasted baby potatoes.
This will work with any herbs you have on hand and also is great for grilling.
