Mediterranean Guacamole

This is a take on a recipe from Claire's sister in law, Ashley. She adds cherry tomatoes to hers which really takes it up a notch.
Ingredients
16 mint leaves
3 sprigs of parsley
2 avocados chopped
2 tsp olive oil
1 tbs lemon juice
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 a block of feta (about 1/2 cup) cut into small cubes
Directions:
Finely chop the mint and parsley. Set aside a small amount to garnish the top. In a bowl mix together all the ingredients except the feta cheese. Once the guacamole is well mixed, gently fold in the feta. Garnish the top with remaining herbs. Serve as a dip or on toast.
