Fancy Radishes

Ingredients
20-30 radishes washed and cut in halves or quarters depending on their size
1 tbsp. of melted butter
1 tbsp. olive oil
6-8 sprigs of thyme. (the flowers are edible don't be afraid to use them)
2 cloves of garlic finely minced
1 tbsp. of crème fraiche (you can substitute sour cream)
1 tsp of flaky salt (we use Maldon)
Directions:
Preheat oven to 500 F. Remove thyme leaves from stems and set aside a small amount for garnish. Mix butter, olive oil, thyme, garlic and radishes in a bowl. Spread out evenly on a baking sheet and place in the oven for 5 minutes, then turn the oven on broil and allow the radishes to toast. (keep a watchful eye to make sure they are not burning). Sprinkle with salt and toss while the radishes are still hot. To serve: top with crème fraiche, reserved thyme leaves and an extra sprinkle of flaky salt.
